UMM Prepares Coffee and Cocoa CoE Featured Programs

Coffee is a good commodity in Indonesia. Seeing this opportunity, the Department of Food Technology, University of Muhammadiyah Malang (UMM) initiated the establishment of the Coffee and Cocoa Center of Excellence (CoE) flagship program, which explored the program by holding a coffee bean processing short course at the end of last July.

Founder of Indonesia Coffee Academy (INCA), Drs. Hendarto Setyobudi, in his material, explained that coffee plantations are an essential commodity in Indonesia. This is because Indonesia is the fourth largest coffee producer in the world after Brazil, Vietnam, and Colombia. According to data from the International Coffee Organization (ICO), in 2020 Indonesia's total coffee production reached 11.95 million sacks measuring 60 kg.

"In addition, Indonesia also has various types of coffee. But the most famous is robusta and arabica. Even though they are the same type, the aroma and taste of coffee can differ depending on the climate and region. For example, Priangan coffee is known to have a richer aroma. Meanwhile, Balinese coffee is known to have a more sour taste than Priangan coffee," said the Apprentice Trainer at the Specialty Coffee Association of America (SCAA).

In this class, Hendarto also demonstrated how to produce espresso, cappuccino, and americano coffee. He said that besides using the seeds, coffee husks could also be used for various things, including organic fertilizer, animal feed, and food. "Coffee rind has a cassava substance rich in fiber and antioxidants. It is this cassava substance that they can process into functional foods and drinks," said Hendarto.

On the same occasion, the Dean of the Faculty of Agriculture and Animal Husbandry (FPP), Dr. Ir. Aris Winaya, M.M., M.Sc. IPU. welcomes this CoE development initiation activity. He hopes to carry out this training activity periodically to support the realization of the CoE Coffee and Cocoa professional class. In the future, this class will be open to students and the general public.

"FPP itself already has several superior classes such as CoE for Seed Production Industry, CoE Essential Oil, Ruminant Professional Class, Poultry Professional Class, Shrimp Professional Class, and Agrocomplex Product Export Professional Class. The presence of CoE Kopi and Cocoa will add to the ranks of superior classes to facilitate the interests and talents of students, "he concluded. (apg/shi)
